Super Bowl Sunday is pizzeria’s busiest night of the year

Fairport, New York – Super Bowl Sunday is the busiest day of the year for pizzerias.
For delivery drivers, much of their time is spent on the road.
Workers at Mark’s Pizzeria in Fairport say Sunday’s sales were on track to outrun last year’s Super Bowl orders.
Ahead of the big game, the store had nearly 300 orders to prepare.
According to Mo Holmes, a driver at Mark’s, his day began in the early afternoon.
“There are three days. Halloween, the Super Bowl, and when the Buffalo Bills are in the AFC Championship. Those are the busiest,” said Holmes.
For almost a decade, Holmes has been delivering for Mark’s. There’s no workflow quite like Super Bowl Sunday, he said.
“Everyone is on alert. Everyone has different hats. Everyone is doing different things to get ready from boxes to dishes to wings, front counter, answering phones. Everyone is trained to do a lot of different things,” said Holmes.
Meanwhile, the kitchen has its own traffic.
“Today is high energy and rock and roll. It’s energy all day long,” said Mark Crane, owner of Mark’s Pizzeria, “The pre-orders are out of sight this year because everyone wants their pizza as close to 5:30 to 6:00 p.m. It’s all hands on deck.”
Amid supply chain issues, Mark’s has also had to make adjustments to get the right ingredients for the right price.
“We just have to be savvier to figure out how to service our customers. Everybody knows what is going on, so everyone has been really good about it and we’re just trying to find smarter ways to absorb those costs and move forward with it,” said Marc Parrina, vice president for Mark’s Pizzeria.
According to Holmes, it’s all about staying focused, on what is claimed as the busiest night of the year.
“You have to be focused, the one thing about us is we’re all trained to be focused during this time,” said Holmes, “When it’s really slow, we’ll be relaxed, but this is like our Super Bowl.”
In order to meet demand on Super Bowl Sunday, most crews at a majority of Mark’s Pizzeria locations nearly doubled.
